Ingredients

550grice
cooked, divide by 3 for uncooked weight
3 Tbspvegetable oil
2 uniteggs
beaten
1 unitonion
2garlic cloves
unit
2 unitcarrots
90gfrozen corn
75gfrozen peas
1 Tbspcoconut oil
240gpineapple
chopped
55gcashews
raw, unsalted
1 unitsweet pepper
2 Tbspsoy sauce
1 Tbspfish sauce
1 tspsesame oil
1 tspchili garlic sauce
½ tspsalt
to taste
1 tspcurry powder
½ tspGinger powder
¼ tspwhite pepper
2 unitsgreen onions
2 Tbspraisins
⅓ cupcoriander
Instructions
Step 1
Beat the eggs and fry, set aside and chop in small pieces
Step 2
Heat vegetable oil in a wok or large non stick skillet over high heat.
Step 3
Add garlic and onion, cook for 1 minute.
Step 4
Add the diced carrots peas and sweetcorn, stir for 3 to 5 min
Step 5
Move the vegetables to one side, add more oil
Step 6
Add rice, fried egg and Sauce ingredients of choice. Cook, stirring constantly, for 2 minutes or until rice grains goes from being wet with sauce to sort of caramelised.
Step 7
Meanwhile, In a different pan, heat the coconut oil
Step 8
Add diced pineapple, cashew and sweet pepper, stir for 3 to 5 min, until slightly caramelized then transfer to the wok with rice
Step 9
Add the chopped green onions and raisin, combine all together
Step 10
Garnish with coriander
