Instructions

Step 1
Preheat the oven to 180C fan.
Step 2
Whisk the eggs and sugar until thick, creamy and almost white in colour. It should leave a trail on the surface.
Step 3
Lightly fold in the flour. Place the mix into a 9" ring tin and level out.
Step 4
Cook in the centre of the oven for 10 - 15 minutes until cooked and golden. Turn onto a cooling rack carefully.
Step 5
You can freeze at this point or sock as in the next step and freeze ready to serve.
Step 6
Heat the water and sugar in a saucepan over a low heat, until sugar has dissolved. Leave to cool for 10 minutes, then add the coffee granules and stir until dissolved, add the brandy when cold.
Step 7
Soak the sponge with the liquid gradually, drizzling over small amounts of liquid every 15 minutes or so, repeat until all the liquid is used up or the cake can not soak up any more liquid.
Step 8
Freeze now if desired and do the final touch just before serving.
Step 9
To serve, whip the cream and put it carefully around the top edge of the ring and then dust with the sieved cocoa powder
