Instructions
Step 1
Chop the onion and garlic and fry in a little oil until soft
Step 2
Add the chopped carrots and cook for a few more minutes
Step 3
Add the lentils and stir, then add the can of tomatoes, chilli powder and half of the stock
Step 4
Now turn the heat to low and put the lid on and let it simmer for about half an hour until the carrots are soft
Step 5
Give it stir every 10 minutes or so and add more stock if necessary
Step 6
If you like a smooth sauce, once the carrots are cooked, put in a blender and whizz - again add more stock if you want
Step 7
Whenever you want, you can brown the chicken and then add to sauce and cook through for about 10-15 minutes
