SECRET TO SOFT & PILLOWY MARY GRACE DOUGH:
½ cupbutter
½ cupgranulated sugar
2eggyolks
large
4 cupsall purpose flour
⅔ cupinstant mashed potato powder
preferably
1 Tbsppowdered milk
1 Tbspactive dry yeast
1 tspkosher salt
2 cupswater
at room temperature

SOFT & PILLOWY MARY GRACE CHEESE ROLL DOUGH:
Step 1
Cream butter and granulated sugar in a large bowl until it turns light in color and sugar is dissolved completely. Add 2 egg yolks and stir to combine very well.
Step 2
In a separate large bowl, combine all of the dry ingredients: ap flour, instant mashed potato powder mix (plain), powdered milk, active dry yeast and salt. Mix and whisk until all of them are evenly distributed. Sift them 3X over a very large bowl to evenly distribute and sift through all of the dry ingredients to avoid any lumps.
Step 3
Alternately, mix the dry ingredients and water in the creamed mixture until fully incorporated and it forms a big dough mass and is quite sticky.
HOW TO SHAPE THE CHEESE ROLLS:
Step 4
On a big working surface, lightly dust it and knead the dough until it is soft, supple, and pliable. It takes around 8 minutes to do by hand.
Step 5
Transfer the dough to a lightly oiled large bowl. Cover with a damp towel, and let it rise in the oven for 1 - 2 HOURS until it doubles in volume and size.
Step 6
Lightly dust the working surface with flour, and cut the dough in half. Then cut them in 40 gram pieces.
Step 7
Roll each piece into a ball. Roll them gently using the palm of your hand to the remaining dough pieces in a circular motion. You can do it with both hands.
Step 8
Flatten each piece in a rectangle with a rolling pin. Fill them with Chevital or a soft white cheddar stick that is 4" x 1/2". Roll and cover in a log. Close the seams to seal the cheese roll. Transfer all of the remaining cheese rolls onto a baking sheet with 1/4" apart.
Step 9
Cover the cheese rolls with a damp towel. Let them rise under an oven pilot light for 30 minutes to proof (rise) the 2nd time.
HOW TO BAKE THE CHEESE ROLLS:

Preheat the oven at 400F.
Step 11
Brush them lightly with egg wash (1 egg and 1 tbsp water). Bake the cheese rolls in a preheated oven of 400F for 20 - 25 minutes, or tops are GOLDEN.
Step 12
Remove cheese rolls in oven, and light them cool slightly on the wire rack.
Step 13
Dip them with granulated sugar while the cheese rolls are slightly warm. Then sprinkle some aged Chevital and white soft cheddar cheese.
