Instructions
Step 1
Heat the oil in a saucepan and fry the onion and the crushed garlic, for 8-10 minutes, until golden.
Step 2
Stir in the chickpeas, tomatoes, cumin and stock. Simmer, uncovered for 30-40 minutes, until the chickpeas are very soft and most of the liquid has evaporated.
Step 3
Rinse the preserved lemon and cut away the flesh and pith. Cut the peel into slivers and stir into the chickpeas along with the coriander. Serve immediately with the bread.
