Ingredients

For the Dip
1Tin Butterbeans
with their water, do not discard
8sun-dried tomatoes
salt
2 Tbspextra virgin olive oil
5basil leaves
3cubes ice
small
⅓ cupwater
1 heaped tspEnglish mustard
0.5juice of lemon
1 tspbicarbonate of soda
For the Garnish
Instructions
For the Garnish
Step 1
Cut your tomatoes and season, put them in the oven at 160C° (fan) for about 15/20mins.
Step 2
Leave them to cool down.
For the Dip
Step 3
Boil the beans with the bicarbonate of soda until they are really soft. Leave them to cool.
Step 4
Put them in a blender with their water with all the other ingredients except from the basil and whizz until smooth.
Step 5
Add more water gradually if needed.
Step 6
Break the basil and mix in a plate before garnishing.
