Instructions

Step 1
Drain tofu cubes for 10 minutes
Step 2
In bowl combine onion, celery, hummus, dill, chopped pickle, mustard, lemon juice and black pepper to taste, and mix
Step 3
Add tofu cubes to the bowl, gentle toss to combine. (Try not to break up the tofu too much)
Step 4
Toast the bread and spread with a thick layer of V-Egg salad, add salsa if desired.
