CHICKPEA AND GRILLED PEPPER BURGER WITH DILL-DUNKED CUCUMBER SALAD

Ingredients
6 servings
3red peppers
olive oil
sea salt
freshly ground black pepper
200gonions
oven - baked
500gcooked chickpeas
garbanzos
3garlic cloves
2eggs
1 tablespoonsmoked paprika
1 tablespoonmild chilli powder
piment d’Espelette
50gpanko breadcrumbs
rapeseed oil
or peanut, for frying

Instructions
Step 1
1 Preheat the grill (broiler) to 250°C (475°F/Gas 7).
Step 2
2 Halve the peppers and remove the core and seeds. Put the pepper halves on a baking tray with the skins facing up and drizzle with the oil. Sprinkle with salt and black pepper. Grill (broil) until the skin is black. Remove the peppers and transfer to a plastic bag. Allow them to cool, then rub or pull off the skin and cut into pieces.

3 Make the Oven-Baked Onions.

4 Rinse the chickpeas in cold water and drain them well in a colander.
Step 5
5 Peel and finely chop the garlic cloves. Lightly whisk the eggs in a food processor. Add the Oven-Baked Onions, chickpeas, grilled peppers, paprika, chilli powder, panko breadcrumbs, garlic and salt. Pulse-blend so all the ingredients are well combined, but not too finely blended.

6 Take a handful of mixture at a time and shape into 6 round patties, either by hand or using a food ring. Put the patties in the refrigerator for at least an hour, preferably longer, so that they hold together better when you fry them.

7 Preheat the oven to 180°C (350°F/Gas 4).

8 Take some sprigs of dill for the cucumber salad. Shave the cucumber for the salad lengthways using a vegetable peeler. If you want you can first remove the seeds from the middle – the cucumber will release less water. Put the cucumber shavings in a bowl and mix in the dill, lemon zest, sesame seeds and some dill heads. Drizzle over a little olive oil and carefully turn the salad using your hands. (Avoid using any implements, otherwise the cucumber may get squeezed to pieces.) Season to taste.

9 Heat a frying pan (skillet) over a medium heat and pour in a little oil. Fry the patties for a few minutes on both sides, until they have a nice colour and a crispy surface. Transfer the patties to an ovenproof dish and bake for 5–10 minutes.
Step 10
10 Butter the buns on the cut surface and fry them quickly in a frying pan or grill them in the oven.
Step 11
11 Put a patty at the bottom of each bun and top with the cucumber salad, and a few dill heads, as you like.
