Step 1
On medium heat add the butter to a pan and then add the shredded mushrooms, sprinkle with a little salt and stirr fry till slightly browned

Add the diced tomato to the pan and mix will for 2 minutes

Add the mix to small baking dish and add the cheese

In a separate ball separate one egg and keep the yolk aside and add one whole egg to the white.

Whisk the white and the egg with pepper and salt to taste

Add the egg mixture to the baking dish and be sure it goes in-between the mixture

Bake in 200C for about 10 minutes or untill buffed

Add the yolk on top and bake for another 5 minutes

Drizzle a little spoon of chilli oil on top
