Savory Whipped Sweet Potatoes — Spoons n Spices

I love sweet potatoes in any form. My absolute favorite type of sweet potato is the Japanese sweet potato. It has the consistency of a normal white potato and it’s not as sweet as a regular sweet potato. If you haven’t tried this type before, I highly recommend them.

Instructions

Step 1
Preheat the oven to 400 degrees. Place the sweet potatoes on a parchment lined sheet pan and drizzle them with avocado oil. Place the sheet pan in the oven and bake for about 70 minutes. The sweet potatoes should be soft and cooked through. Remove the skins.
Step 2
In the bowl of your stand mixer or in a medium bowl, add the peeled sweet potatoes, liquid from the sauce pan, salt, and pepper. Using the stand mixer or hand mixer, whip the potatoes until they are smooth. Serve hot.
Step 3
Serve as a side to any meal.
