Step 1
Cook the bacon in a large pot over medium heat. Gently fry it until it becomes crispy, allowing the fat to slowly render down. After frying the bacon, add in the onion, garlic, sun-dried tomatoes, and chili flakes. Cook until the onion is translucent, which should take about 4-5 minutes.
Step 2
Add tomato paste and fry for 2 minutes (this is important to sweeten it). Pour in the wine and deglaze. Simmer for a couple of minutes, or until the paste thickens again.
Step 3
Pour in the chicken broth and cream. Add the pasta and bring to a gentle simmer. Turn the heat to low-medium and cook with the lid on, stirring occasionally. If the sauce absorbs before the pasta is cooked, just add some hot water a little at a time until the pasta is al dente and the sauce thickens.
Step 4
After turning off the heat, stir in the parmesan and basil. Adjust the seasoning to your liking, but taste it first as the bacon and chicken broth are already salty. Bon appétit!
