Step 1
Start a big pot of salted water to boil and preheat the oven to 400. Cover a big cookie sheet with parchment and pour on the rinsed tomatoes – spray them with olive oil, give them a shake and spray them again, followed by a good sprinkling of salt and pepper.
Step 2
Roast the tomatoes for about 20 minutes, until they are just starting to burst, meanwhile, cook the pasta according to directions. Try to time it so that you are draining the pasta just as the tomatoes are done, and reserve some of the hot pasta water. Put the pasta back into the warm pot.
Step 3
Toss all of the Boursin into the hot, drained pasta, and gently stir until the cheese has melted, adding a bit of water back in as needed to make sure the pasta is all coated. Add all of the roasted tomatoes, making sure to scrape the baking juices in as well, give a little stir and dinner is ready.
Step 4
