Instructions
Step 1
In a small bowl or glass combine gelatin with ice-cooled water and place in the fridge for 10 minutes or until spongy.
Step 2
In a saucepan combine strawberries and sugar. Bring it to a simmer, remove from heat and use an immersion blender to blend until smooth.
Step 3
Add gelatin and mix until gelatin dissolves.
Step 4
Transfer to the mixer bowl and whisk until mass cools, doubles in size and forms soft peaks (about 12-15 minutes)
Step 5
Square shape cake tin cover with cling film and lightly grease with vegetable oil.
Step 6
Transfer mass to the cake tin, and cover with greased cling film on top.
Step 7
Place in fridge to firm(I like to leave it overnight)
Step 8
When ready, remove from the tin and cut into squares.
Step 9
Mix cornstarch with icing sugar and lightly dust the work surface, transfer your strawberry delight onto a work surface and sprinkle with the rest of the icing sugar mixture.
