Step 1
Preheat the oven to 375 degrees F. Grease or spray a 24 cup mini muffin pan with cooking spray.

In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. Make a well with the whisk in the center of the ingredients, and add the eggs, applesauce, orange juice, and oil. Whisk just until combined; do not overmix. Fold in the cranberries. Divide the batter among the prepared muffin-pan cups.
