Instructions

Step 1
Bring a large pot of water to a boil over high heat
Step 2
Add the cauliflower florets and cook until really tender, 8 to 10 minutes
Step 3
Remove from the heat, strain and let cool slightly
Step 4
Transfer the cauliflower to a blender or food processor
Step 5
Add the oil and butter, snd blend until smooth and creamy
Step 6
Season to taste with salt and pepper
