2 Tbspheavy cream
1 Tbspolive oil
coconut, avocado, or butter
5button mushrooms
sliced
1roma tomato
seeded and diced
1 ½ cupsspinach
salt
to taste
black pepper
to taste

Step 1
Preheat oven to 180°C.
Step 2
In a medium bowl, whisk the eggs and cream until light and fluffy. Season with salt and pepper and set aside.

Heat the oil in a medium oven safe skillet. Saute the mushrooms about 4 minutes. Add the tomato and spinach and saute until spinach wilts. Season with salt and pepper.

Pour the egg mixture over the veggies. Top with cheese, if desired. Bake in the oven for about 25 minutes or until eggs are fully cooked.

If you do not have an oven safe skillet, transfer the veggies after sauteing to a baking pan, pour eggs over top before baking in the oven.
