SOURDOUGH PUMPKIN SPICE BREAD
“My girlfriend Suzanne and I like to order some of our spices in bulk from McCormick. This last batch included a pound of apple pie spice mixture—a combination of cinnamon, nutmeg, and allspice—which is now in everything sweet that I bake. I ended up developing and making this recipe for Halloween. Serve this bread with cream cheese and Spiced Vanilla Honey or Cinnamon Date Cheese.”

active dry yeast

warm, 85°F

Instructions
Sourdough Starter (white)
Step 1
“1 Combine the packaged starter with the flour and yeast in a medium bowl. Whisk in the warm water until the mixture is smooth. Stir in the apple chunks. Transfer to a plastic container or crock. Cover with a few layers of cheesecloth and secure with a rubber band; then cover loosely with plastic wrap. Let stand at warm room temperature for 24 hours (80°F is optimum), stirring the mixture 2 to 3 times. It will be bubbly and begin to ferment, giving off a tangy, sour aroma. It will be the consistency of a pancake batter.
Step 2
2 Remove the apple chunks. Add the first feeding flour and water and whisk to combine. Let stand for 8 hours longer. The starter will be ready to use. If you desire a more sour starter, or do not wish to use it right away, cover the starter loosely and store it in the refrigerator for 24 hours. Step 3
Place all the ingredients in the pan according to the order in the manufacturer’s instructions. Set crust on dark and program for the Basic cycle; press Start. (This recipe is not suitable for use with the Delay Timer.)
Step 4
When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
