Instructions

Step 1
Let the beef joint sit unwrapped at room temperature for an hour. Pat it dry with kitchen towel.
Step 2
Put the oil, herbs and salt into a bowl. Mix and then roll the joint in it to cover all over. Adding some ground rock salt to the outside is no bad thing at this point. Salt will permeate deep so don't overdo it.
Step 3
Pre-heat the fryer to 200C for 5 mins. When ready place the joint in the pan. Cook on 200C for 10 mins. After that reduce to 180 for 10 minutes. This timing is for the stated weight of meat in the ingredients for 2 people. The larger the joint the longer the cooking. Always keep to 12 mins at 200C to start and reduce to 180C after. This is vadrd on me liking my meat rare. As a guide cook the joint 20 mins per 450g for rare. Add on 5 mins tor medium and a further for more done. As with all cooking you will need to adjust and adapt to your taste and this is just mine. I made mine a little too rare first time so I adapted.
Step 4
Let the joint rest for 3 minutes then carve.
