Prawn Jambalaya

A quick an easy meal with bags of flavour.
You can replace the prawns with chicken or any other protein you would like.
To make is super speedy, you can use pre-cooked rice either from leftovers or ready cooked packet rice.

Instructions
Step 1
Dice the onion and red pepper and fry in the oil.
Step 2
Crush the garlic (or even quicker use lazy garlic from a jar or tube) and add to the onion and red pepper until everything is soft.
Step 3
Add in chorizo until the oils turn the vegetables a lovely orange colour
Step 4
Add in the Cajun spice (make your own spice mix using the recipe here https://whi.sk/q0er8)
Step 5
Add in the rice and mix until covered in the spices.
Step 6
Stir in the tinned tomato and stock.
Step 7
Cover and simmer until the rice is cooked, and top up with water if needed so it doesn't burn.
Step 8
Add the prawns on top of the bubbling sauce during the last few minutes of cooking and leave until pink on one side, then turn them over to cook on remaining side. This will only take a couple of minutes.
