Chorizo fried eggs on toasted soda bread

Quick and tasty, this really hits the spot. It makes an excellent brunch dish, but I enjoy it at any time of day. Everything is cooked in one pan so the eggs pick up lots of lovely flavour from the spicy chorizo.

Instructions

Step 1
1 Heat the oil in a frying pan over a medium heat. Add the chorizo and the thyme leaves and cook for about 2 minutes. Remove the chorizo with a slotted spoon, transfer it to a plate and cover with foil to keep it warm.

2 Put the frying pan with the chorizo-flavoured oil over a medium-high heat. Crack each egg into a cup and add it to the pan. Fry the eggs until the whites are cooked and the edges are crispy.
Step 3
3 Meanwhile, lightly toast the soda bread on one side under a hot grill. Mash the butter and cheese together with a fork, then spread the mixture over the untoasted side of the bread.
Step 4
Put the toasts under the grill for a minute to melt the cheese. Remove them and quickly top each piece with some chorizo and a fried egg. Garnish with sprigs of thyme, season with salt and serve at once.
