Instructions

Step 1
Preheat oven to 450F.

Prepare Potatoes

Step 2
Rub potatoes with oil and roast on a baking sheet until soft but not fully cooked, about 15-20 minutes.
Step 3
Combine meat, breadcrumbs, egg, sour cream, garlic, and Stormcloak seasoning in a large bowl. Form mixture into 2" balls and set aside until the potatoes are ready.
Step 4
Remove potatoes from oven and turn it down to 350F
Step 5
Cut the potatoes into .5" thick coins, keeping them in a potato shape.
Step 6
Alternate potatoes and meatballs in a casserole dish.
Step 7
Mix boiling water, sour cream, and tomato paste in a small bowl then pour over meatballs and potatoes.
Step 8
Bake at 350F until the meatballs are cooked through, about 25-30 minutes.
