375gwholewheat spiral pasta
organic
200gswiss brown mushrooms
sliced
400gmushrooms
sliced cup
2 Tbsextra virgin olive oil
1brown onion
finely chopped
4garlic cloves
crushed
2 Tbstomato paste
500gtomato garlic & basil pasta sauce
organic, chunky
½ cupcontinental parsley leaves
finely chopped
½ cupfinely grated parmesan
Instructions
Step 1
Cook pasta according to packet instructions. Drain.
Step 2
Meanwhile, place mushrooms in a food processor and process until finely chopped.
Step 3
Heat oil in a large, deep frying pan over medium- high heat.
Step 4
Cook onion and garlic, stirring, for 3 minutes or until onion starts to soften.
Step 5
Add mushroom and cook, stirring, for 5 minutes or until starting to brown.
Step 6
Add paste and stir to combine.
Step 7
Add sauce and bring to the boil.
Step 8
Reduce heat to medium and simm r, uncovered, for 7 minutes or until sauce has thickened slightly.
Step 9
Add pasta and half each of the parsley and parmesan.
Step 10
Toss to combine.
Step 11
Season.
Step 12
Serve topped wit remaining parsley and parmesan.
