Tagliatelle with sun dried tomato sauce

Instructions
Step 1
Heat the oil and margarine or butter in a large saucepan.
Step 2
Add the onion, celery, carrot and garlic and cook, stirring, for 8–10 minutes or until beginning to soften.
Step 3
Stir in the canned tomatoes, sun-dried tomatoes and wine.
Step 4
Season with salt and pepper, cover and simmer for about 30 minutes, stirring occasionally.
Step 5
Meanwhile, cook the tagliatelle in boiling salted water for 8-10 minutes or until al dente
Step 6
(tender but still slightly form to the bite).
Step 7
Pour about half the sauce into a food processor or blender and purée until quite smooth.
Step 8
Stir into the remaining sauce and reheat if necessary.
Step 9
Drain the tagliatelle thoroughly and transfer to a warmed serving bowl.
Step 10
Pour over the sauce
