Ingredients
2 servings
1 cupwholemeal couscous
cooked
2 cupbaby spinach
1 cuppumpkin
diced
1 cupcauliflower
diced
2red onions
chopped in quarter
1 ½ cupchickpea
0.5apple
diced
2 Tbsppecan
2 Tbspraisin
1 Tbspolive oil
1 Tbspras el hanout
or your favourite spice mix

Instructions
Step 1
Preheat the oven to 180C.
Step 2
To an oven tray with baking paper, add the diced pumpkin, cauliflower, red onion, chickpeas, olive oil and ras el hangout. Mix to coat the spices and olive oil on the vegetables
Step 3
Cook in the oven for 20 minutes ?! Add the pecan 5 minutes before the end
Step 4
In the meantime, prepare your couscous according to the packet instructions
Step 5
Add the tahini, lemon juice and agave to a bowl or small food processor and whisk together.
Step 6
To build the bowl, add the baby spinach, couscous, roasted vegetables, and apple and top with the pecan and raisin. Cover with the tahini dressing.
