Step 1
In a large dutch oven, over med-high heat cook bacon until crispy then remove to a plate and crumble when cool. Add onions and garlic and cook until softened. Add flour, salt and pepper. Cook for 3 minutes, then add chicken broth potatoes, and heavy cream. 'ook until potatoes are tender, approximately 10 minutes. Break up potatoes with potatoe masher for a thick and chunky consistency. Wisk in sour cream and then cheddar. (Melt cheese throughly.) Serve garnished with bacon and scallions.
