Slice the speck or make small cubes depending on the piece you have.

Now it is time to prepare the spätzle. Cook them in salty boiling water as long as indicated on the box. It usually takes about 10 minutes. While the spätzle are getting ready, proceed preparing the other ingredients.

Step 3
Warm up a pan with no more than a spoon of olive oil. Ease down the speck and cook it for few minutes. You can make it crispy or more soft depending on what you like the most. When is ready, remove from the pan and keep aside.

Take a small pot and pour the heavy cream. Add a bit of salt, pepper and the saffron. Use a spatula or a whisk and stir continuously until the sauce is dense.

Step 5
When the spätzle are ready, stir them and ease them down in the saffron sauce. Add 3/4 of the speck too and stir for a minute. Serve adding what is left of the speck.
