Nita's Practice Makes Perfect Low Carb Cauliflower Pizza

I call it practice makes perfect because I have tried EVERY cauliflower pizza recipe under the sun. This is one of a kind hybrid of several different recipes and if you follow the instructions exactly I promise this will blow any frozen cauliflower crust out of the water.

Instructions

Step 1
Preheat Oven to 425
Step 2
Heat Cauliflower rice on stove or microwave according to package instructions. Let cool.
Step 3
Squeeze every bit of water that you can out of the cauliflower so it's dry as possible. THIS IS KEY!!!! If you think you have squeezed enough, squeeze some more!!!! If it is not dry it will taste good but the crust will fall apart.
Step 4
Put the cauliflower in a big mixing bowl with the eggs, mozzarella, ricotta, Italian seasoning, and almond flower, and mix it as well as you can so it's as uniform as possible.

Divide mixture in half

Line 2 baking sheets with parchment paper and give a quick spray of non stick spray on each one. The parchment paper and baking sheet is essential to the survival of the crust!
Step 7
Put half the dough on each baking tray and mold it into a pizza shape, 1/3 in thick, leave a little ridge at the end for the "crust"
Step 8
Put it in the oven for 15 minutes and precook any toppings like meats or veggies in a sauté pan while the crust is in the oven.
Step 9
Take the dough out after 15 minutes. It should be a light golden brown color. Gently put on low sugar tomato sauce, more cheese, and any toppings. Bake for another 6-8 minutes or until cheese is melty
Step 10
Take your pizza's and remove the parchment paper-with the pizza's still on them-from the baking sheet right away so the pizza can cool. Let pizza cool on the parchment paper for at least 5 minutes. Cut and serve.
