Instructions

Step 1
•ramen eggs (optional) -prepare night before, boil eggs for 6 minutes, add to ice water bath and peel, next prepare marinade, add equal parts soy sauce, mirin, and sake and two teaspoons of sugar, stir mixture until sugar is dissolved add eggs and marinate overnight.

-mince garlic and ginger (set aside)

-mince shallot (set aside)

-grind sesame seeds
Step 5
-In a medium pot heat the sesame oil over medium-low heat, add minced garlic, ginger and shallot, stir fry until fragrant.
Step 6
-add ground pork and increase heat to medium, cook the meat until no longer pink.
Step 7
-add doubanjiang and miso paste, quickly blend well with the meat to avoid burning
Step 8
-add ground sesame seeds and sugar and mix well
Step 9
-add sake and chicken stock and bring to a simmer
Step 10
-taste, add salt if necessary, and white pepper, cover with lid and keep simmering while you prepare your noodles
Step 11
-bring salted water to a boil and add ramen noodles, cook for at least 3 minutes.
Step 12
- remove cooked noodles from water and add too a bowl, add ramen broth then add toppings of choice!
