Step 1
Combine diced tomatoes, onion, 3T olive oil, minced garlic, fresh basil, and balsamic vinegar in a medium bowl; season with salt and pepper to taste.
Step 2
Heat griddle to 350 degrees. Brush one side of bread with olive oil and place oil side down onto the griddle. Toast bread until it is golden brown. Immediately rub toasted bread slices with fresh garlic clove. Repeat the process with the second side of bread.
