Instructions
Step 1
Preheat the oven to 180°C
Step 2
Ensure meat is NOT frozen, fry surface with a paper towel.

Tie the roast with string to keep the roasts shape while cooking if required.
Step 4
Apply Bush Spice, Rosemary, Thyme and salt to all surfaces.
Step 5
Place on a rack inside a baking pan.
Step 6
Put 4 tablespoons of vegetable oil in the bottom of the pan along with 4 crushed garlic cloves and ¼ teaspoon of dried Rosemary.
Step 7
Cooking time estimates after initial 45 minutes;
Step 8
A roast that weighs less than 3 kg, cook 30 minutes for every 500 grams of roast.
Step 9
A roast that weighs more than 3 kg, cook 25 minutes for every 500 grams of roast.
Step 10
Ensure roast is rested, covered, for 15 minutes after removing from the oven for the juices to redistribute.
