Ingredients
2 servings
white fish
Firm, enough for the number of people to serve
½ cuplime juice
or lemon
fresh ginger
stem, to taste
1can coconut cream
or coconut milk
lettuce
salad ingredients
tomatoes
cucumber
onion
red capsicum
green capsicum
yellow capsicum
Fresh coriander
pine nuts
whole grain bread
fresh, crusty
salt
freshly ground black pepper
Instructions
Step 1
Cube the fish (off the skin) and marinate together with the salt, pepper, ginger, and enough lime/lemon juice to cover.
Step 2
Leave in fridge overnight.
Step 3
Just before serving, stir in coconut cream (approx 1/2 can for 2 persons, full for 4 etc)
Step 4
Serve over a salad of lettuce, tomatoes, cucumber, onion, and a colourful medley of chopped red, green & yellow capsicum sweet peppers
Step 5
Garnish with fresh coriander leaves and pine nuts
Step 6
Serve with fresh crusty whole grain bread (good for mopping the juice)
Step 7
And, for that special occasion, a small glass of your favourite chilled white wine is the perfect match.

Get creative: the great thing about this recipe is that you can vary the salad ingredients to include your own unique mix of anti-inflammatory vegetables, fruits, pulses, lentils, nuts, and beans. Enjoy!
