Instructions
Step 1
Grind the meats with a medium grind
Step 2
Shred or dice cheese
Step 3
Mince Jalapenos
Step 4
Mix all ingredients and stuff into casings.
Step 5
For smoking the sausage add 2tsp (or to manufacturers instructions) of pink salt and cold smoke up to 4 hours.
Step 6
Refrigerate over night to dry out
Smoker
Step 7
Smoke to 152 degrees
Step 8
Submerge in Ice Bath to stop cooking
