Pumpkin apple crisp

Delicious fall dessert that combines the taste of fresh apple dumplings and fall pumpkin pie with a hint of oats.

Preheat oven to 350°F

Prepare Pumpkin: Wisk together, 1/2 can of pure pumpkin puree, 1/3 cup unflavored almond milk, 1/4 cup of pure maple syrup, 1 tablespoon of ground flaxseed, and 1 and 1/2 tablespoons of pumpkin pie spice. Let rest for 5 minutes

Prepare Apples: Place slices apples in an even layer in a 2-quart square baking dish. Pour pumpkin mixture over apples.

Make Oat Topping: In a small bowl, wisk together, 2 tablespoons of pure maple syrup, 1 tablespoon of tahini, and 1/4 tablespoon of ground cinnamon. Add oats and toss to coat.

Bake Pumpkin Apple Crisp: Sprinkle oat topping over pumpkin and apples. Bake until apples are tender, 40 to 45 minutes.
