Punjabi Kadhi Pakora

Kadhi is a savoury dish served over rice but can be enjoyed with roti or naan. Recipes differ from region to region in India but Punjabi style uses veggie pakoras (fritters). Fritters can be homemade or store bought. I bought them from a local Indian restaurant to save time.

Instructions

Step 1
* To a large bowl, add besan and yogurt. Make sure the yogurt is at room temperature. Add 3 cups of water and whisk until besan and yogurt are well combined.
Step 2
* Add 1 tsp salt, 1/2 tsp red chili powder, 1/2 tsp turmeric powder and whisk until you have a lump free mixture.
Step 3
* Add remaining 3 cups water and mix until it's all mixed together. Set aside.
Step 4
* In a large and deep pan, add 2 tablespoons of oil on medium-high heat. Once the oil is hot add the mustard seeds and cumin seeds. Let them splutter and then add garlic
Step 5
* Add the sliced onions and cook for 2 minutes. Then add the 1 tsp salt, remaining pepper, turmeric, ginger powder and cook for another 1 minute. Add tomatoes. Cook until onions and tomatoes soften. 3/4 minutes.
Step 6
* Add the prepared besan-yogurt mixture into the pan. Now with heat on medium-high, stir continuously until the kadhi comes to a boil. Then lower the heat to low-medium and let it cook for around 30 minutes. Keep stirring it in between.
Step 7
* Add pakoras to kadhi and cook for another 10-15 mins. Adjust salt if needed. Add mint chutney powder and chopped cilantro.
Step 8
* Serve on top of the bed of white rice. Enjoy!!
