For the dressing
¼ cupstrawberries
sliced
3 tablespoonsextra virgin olive oil
2 tablespoonsbalsamic vinegar
1 tablespoonshallot
chopped
1 tablespoonfresh lemon juice
½ teaspoonsalt

Instructions
Make the dressing
Step 1
1. Combine all ingredients in a blender or small food processor until smooth and creamy. Dressing will keep refrigerated up to five days.
Make the salad
Step 2
1. Put the arugula in a large salad bowl or a large serving platter. Top the remaining ingredients in drizzle with 3 tablespoons of the dressing. Tossed together gently. Serve with additional dressing on the side.
