DEVILED BRUSSELS SPROUT SALAD
I wasn’t quite sure what to call this salad. It is pretty much a hybrid of a deviled egg and a crispy Brussels sprout salad. Taking a hard-boiled egg and mixing it up with the same kind of ingredients in a spicy deviled egg filling makes for an incredibly rich and extremely tasty sauce to coat those crispy sprouts. So, if you like both deviled eggs and crispy Brussels sprouts as much as I do, then you’re going to love this salad

Instructions
Step 1
Mash up the hard-boiled eggs with the mayonnaise, mustard, hot sauce, salt, and scallions, and keep in the fridge until you’re ready to serve.
Step 2
Cook the sprouts. Heat the oil in a large cast iron pan over medium-high heat. Add the sprouts to the pan, flat sides down. Cook undisturbed for about 5 minutes, until the sprouts are charred on that one side. Give them a stir and continue to cook for another 2 to 4 minutes, until the sprouts are fork-tender. Season lightly with salt and pepper.
Step 3
Transfer them to a serving bowl and allow them to cool slightly.
Step 4
Pour the egg sauce over the sprouts, toss to combine, and serve warm.
