Instructions

Step 1
Defrost ground turkey and ground pork.
Step 2
Chop onion and water chestnuts and mix with the meat.
Step 3
Add sesame oil, garlic (or garlic powder), soy sauce, salt, and sugar to meat mixture and mix well. Let it sit on counter to marinate. (Note you can also add dried mushrooms soaked in water, squeezed, and diced - that would make sal mai)
Step 4
Pour 3 cartons of chicken broth in large pot and add ginger and bring to a rolling boil. Put fennel and coriander in tea ball and put in broth while boiling.
Step 5
Chop Napa cabbage and put to the side.
Step 6
You can take half of the meat and place in a Ziploc bag to freeze for later if you want.
Step 7
Once boiling, roll meat into meatball size portions and drop into the broth. Allow meat to cook until meat is brown. Add more sesame oil to broth to taste. (If you want to make wontons, fold meat into wrappers and close with an egg wash)
Step 8
Scramble eggs in a bowl and drop into the broth and stir lightly on low heat.
Step 9
Once eggs are cooked, add Napa cabbage and turn off the heat.
Step 10
Cover the soup and let it steam. Once the cabbage is softened, then ready to serve and eat!
