Step 1
Heat the olive oil in a pan over medium heat. Add the rice and stir until fully coated in the oil for about 1-2 minutes.
Step 2
Add the chicken broth, coconut milk, stirring continuously, until the broth and coconut milk is fully absorbed, for 15-20 minutes.
Step 3
Once the rice is al dente, remove it from the heat. Add the Parmesan and shrimp stir to combine.
Step 4
Add salt and pepper to taste, and serve with cilantro.
