Ingredients

1cucumber
large, about 8 inch long
6 ozFeta cheese
crumbled
8Kalamata olives
pitted chopped into small pieces
0.25red onion
finely chopped
8cherry tomatoes
chopped finely
1 tablespoonbasil
chopped
1 teaspoonoregano
1 teaspoonlemon juice
½ teaspoonsalt
½ teaspoonblack pepper
1 tablespoonolive oil
or avocado oil
1 tablespoonBasil
or mint leaves, chopped
Instructions
Step 1
In a medium mixing bowl, combine the Feta cheese, olives, onion, tomatoes, seasoning and herbs. Add the lemon juice and toss to combine.
Step 2
Cut the cucumbers in half lengthways
Step 3
Scoop out the seeds and the centre of the cucumber halves making “boats”.
Step 4
Spoon the Feta mixture into the cucumber.
Step 5
Cut the cucumber halves into 8 sections width ways.
Step 6
Drizzle with oil and chopped basil/mint to serve.
Step 7
Serve immediately or cover and serve within a few hours.
