Smashed Garlicky White Beans with Rosemary
1 step
Cook:20min
This creamy bean dish is a welcome substitute for mashed potatoes. It's full of garlicky flavor and offers the same creamy texture as those scrumptious potatoes, but instead of being a pile of fat-laden simple carbs, this version is packed with protein and fiber. Serve it alongside roasted meats or anytime you'd normally offer mashed potates.

Instructions
Step 1
1. In a large skillet, heat the olive oil over medium-low heat. Add the garlic cloves and rosemary and cook, stirring occasionally, until the garlic softens and begins to brown, 6-8 minutes. Mash the garlic with the back of a wooden spoon.
2. Add the beans and cook, stirring occasionally and mashing with the back of a spoon, until thoroughly heated, about 5 minutes. Add the broth while continuing to mash the beans, mixing in the broth. Transfer to a serving bowl; stir in the cheese, salt, and pepper; serve hot.
