Instructions
Step 1
1. Halve aubergine lengthways. Sprinkle cut surfaces with salt and stand for 30 minutes.

2. Rinse and dry with absorbent kitchen paper.

3. Scoop out flesh, leaving shell intact. Chop flesh.
Step 4
4. Melt butter in a non-stick pan, add aubergine flesh, onion and garlic, cook for 4 minutes, stirring.

To microwave: Cook butter, aubergine, onion and garlic, covered, for 4 minutes.
Step 6
5. Stir in tuna, rice, ground bay leaves, lemon juice, stock, tomato purée and half the cheese.
Step 7
6. Fill aubergine shells with stuffing.
Step 8
7. Place in an ovenproof dish and top with remaining cheese. Add 45 ml (3 tbsp) water.
Step 9
To microwave: Place in a flameproof dish with 45ml (3tbsp) water.
Step 10
8. Bake at 190°C (3750F) Mark 5 for 40 minutes. Cover with foil after 20 minutes.
Step 11
To microwave: Cover and cook for 7 minutes. Top with remaining cheese and brown under a hot grill.
