1 ½ cupsRed Bell Peppers
fresh, diced
1 ½ cupOnions
fresh, chopped
2 ⅓ cupsSpinach
fresh, chopped
3 ¼ cupsCheddar cheese

Instructions
Step 1
Pour egg white and eggs into a commercial mixer (batch as needed). Using a wire whip attachment, mix on low speed for 2 minutes. DO NOT OVERMIX.
Step 2
Add milk, flour, baking powder, salt, pepper, and nutmeg (optional). Mix for 4 minutes on low speed.
Step 3
Combine peppers, onions, spinach, and egg mixture in a large bowl. Stir well.
Step 4
Pour 3 qt 2 cups egg and veg mixture into steam table pan lightly coated with pan release spray.
Step 5
Sprinkle 3 1/4 cup cheese over each pan
Step 6
Bake: Conventional oven: 375 F for 50-60 min.
Step 7
CCP: Heat to 165 F or higher for at least 15 seconds
Step 8
CCP: Hold for hot service at 140 F or higher
Step 9
Portion: Serve 1 piece about 2 3/8" x 4"
