Slavic kefir based fritters, oladky

Small thick pancakes or fritters common in Russian, Ukrainian and Belarusian cuisines. Oladky are usually served with smetana (sour cream), as well as with sweet toppings such as varenye, jam, powidl, honey etc.[4] Savoury versions may be served with caviar, similarly to blini.

Instructions

Step 1
Let kefir and egg reach room temperature
Step 2
Except for soda mix all other ingredients into thick batter
Step 3
Heat vegetable oil in a frying pan. Oil should be at least 2 cm deep (3/4 inch)
Step 4
Right before frying mix soda very well into batter
Step 5
Scoop with a large spoon and place a few fritters on the pan. Fry on both sides until golden brown, adjust heat as needed.
Step 6
Put on a paper towel to remove excess oil
Step 7
Serve with honey and tea
