Jollof is a traditional rice dish in several West African countries, including Nigeria. Though the recipe will vary from country to country. Often times served with chicken, it has a great blend of spicy, smoky, earthy flavors. Let's chop!

Instructions

Step 1
Blend tomato, onion, bell pepper, garlic, habanero and tomato paste until smooth.
Step 2
While blending, heat EVOO in large skillet over medium heat.
Step 3
Add puree blend to skillet and stir in seasonings. Bring to a boil.
Step 4
Stir in rice and two cups chicken broth. Once boiling, cover and reduce heat to medium-low.
Step 5
Cook for 30-45 minutes, stirring occassionally.
Step 6
Add additional cup of broth as needed to cook rice.
Step 7
Once rice is cooked and liquid has been absorbed, remove cover. Allow the rice at the bottom to char a bit to infuse with a smoky flavor.
Step 8
When done, stir in chopped cilantro and serve.
