Instructions

Step 1
Preset foil to wrap around the ribs on a baking sheet. Lay ribs on baking sheet, but do not wrap yet.
Step 2
Smoke ribs, UNWRAPPED, for 3 hours on high smoke. (225⁰ with high smoke)
Step 3
After 3 hours, now wrap the ribs with the foil that's already on the baking sheet. Smoke for an additional 2 hours. (Still 225⁰ but decrease smoke)
Step 4
Finally, open the foil back up and baste the ribs in barbecue sauce of your choice. Do not wrap again. Smoke for 1 more hour. (Still 225⁰ and return to high smoke)
Step 5
After smoking for the final hour, cut and serve.
