Ingredients
2 servings
¼ cupAvocado Oil
or another high-smoke point neutral oil
2 TbspSichuan Peppercorns
more or less based on spice preference
2Green Onion
sliced, light green bottom portion only, save top dark green for serving
4cloves garlic
minced
1 tspfive spice powder
1 tspsesame seeds
½ tspbrown sugar
1 Tbsplight soy sauce
1 tspdark soy sauce
1 TbspBlack Vinegar
can also use rice vinegar
1 tspSesame Oil
optional, I used Trader Joe's Sesame Chili Oil for additional heat
8 ozFresh Wheat Noodles
Egg
I added a fried egg to each serving
Green Onion
sliced, dark green top portion
Cucumber
cut into thin slices
Instructions
Chili Oil
Step 1
Heat oil and Sichuan peppercorns in a small saucepan over medium-high. Heat for 5-10 minutes or until the oil begins to smoke. Keep an eye on the oil so it doesn't burn.
Ingredients Before Chili Oil
Step 2
While the chili oil heats, add the bottom parts of the green onions, minced garlic, five spice powder, sesame seeds, and brown sugar to a bowl. Mix together.
Step 3
Once the oil begins to smoke, immediately pour it into the bowl of pre-mixed ingredients. Use a mesh strainer so the Sichuan peppercorns don't go into the bowl. The ingredients should sizzle and cook from the heat of the oil.

Meanwhile, cook noodles according to package instructions. Strain and divide into 2 bowls for serving.
Step 5
To the chili oil bowl, add the light soy sauce, dark soy sauce, vinegar, and optional sesame oil. Stir to combine.
Step 6
Spoon the mixture over the cooked noodles.
Step 7
Add desired toppings such as fried eggs, the sliced top portion of the green onions, and sliced cucumbers.
