Ingredients
6 servings
For the shrimp
2 lbsshrimp
patted dry
1 Tbsppaprika
½ tspcayenne pepper
1 tspgarlic powder
1 tspthyme
1 tsporegano
½ tspsalt
½ tsppepper
olive oil spray
1 Tbspolive oil
1 cuplow sodium chicken broth
For the grits
Instructions
Step 1
1. In a medium size pot, bring 2 cups of chicken broth, milk, water and salt to a boil. Watch it carefully so it doesn't boil over. Stir in the grits. Bring to a boil, reduce heat, cover with a lid and simmer for 30 minutes.
Step 2
2. In the meantime, spritz the shrimp with olive oil spray & coat with the spices.
Step 3
3. Just before the grits are done, heat a large cast-iron skillet or wok with the olive oil over medium/high-heat.
Step 4
4. Add the shrimp, and cook until the spices are blackened and the shrimp is cooked.
Step 5
5. Stir in the butter and cheese into your grits. Remove grits from heat.
Step 6
6. Add chicken broth to the cast iron skillet to deglaze. Cook for a minute over medium heat until it reduces by half. This is your sauce to drizzle over your dish!
Step 7
7. Divide the grits among 6 plates and top with shrimp and sauce. Enjoy!
