Buffalo Fried Chicken Burger with Pickles & Ranch

Instructions

Step 1
Preheat the oven to 200°C. Cut the potatoes into fries. Add to a baking tray with a drizzle of vegetable oil and a pinch of salt and pepper. Mix and put the tray in the oven for 20-25 minutes.
Step 2
Slice the cucumber finely into discs. Add to the remaining cider vinegar with a pinch of salt and sugar.
Step 3
Add milk to the bowl with half.of the cider vinegar. Add the chicken breast and mix.
Step 4
Discard excess milk from the chicken. Add the smoked paprika, cornflour and 1 tbsp of flour. Season with salt and a generous grind of pepper. Mix everything.
Step 5
Heat a large frying pan with a drizzle of vegetable oil. Add the chicken and cook on each side for 9-10 minutes.
Step 6
Heat a small saucepan with butter over a low heat. Once melted, remove from the heat and add the sriracha with a pinch of salt and sugar.
Step 7
Add the mayo to a small bowl with the oregano, garlic and 1 tsp of the pickling liquid with a pinch of pepper.
Step 8
Cut the brioche buns and place on a baking tray, cut side up, in the oven for 4-5 minutes. Spread the ranch over the base of the bun and add the pickles. Serve the chicken with buffalo sauce drizzled over.
