Instructions

Step 1
Get out a large bowl and add the flour and butter. Rub together with your fingertips until it looks like sand.
Step 2
Add the sugar (mixed spice or cinnamon if using) and sultanas, stir around with a fork
Step 3
With the fork, stir in the egg. When it is nearly combined, use your hands to form a ball of dough, using a splash of water if needed.
Step 4
Transfer the dough to the worktop. Add a little flour to both sides of the dough. Roll out the dough until it is 5mm thick.
Step 5
Cut it into rounds using a biscuit cutter (about 8cm in diameter).
Step 6
Put a frying pan onto a medium high heat. Add a small knob of butter (about the size of a fingernail).
Step 7
When the butter has melted, place the Welsh cakes in the pan and cook for 2–3 minutes (leave them alone or they will break). Flip over. Leave for another 2-3 minutes until both sides are brow.
Step 8
Remove from the pan and dust with caster sugar while still warm.
