Step 1
Preheat waffle maker to medium heat
Step 2
In a small bowl whisk together the coconut milk, applesauce, and eggs until well blended.
Step 3
In large bowl, stir together quinoa flour, almond flour, baking powder, cinnamon. Ginger and salt.
Step 4
Add wet ingredients to the dry ingredients and whisk
Step 5
Brush the waffle iron with coconut oil, pur 1/4 cup of batter onto waffle iron.
Step 6
Cook according to waffle iron instructions.
Step 7
Repeat with the remaining batter.
